Spaghetti a Schiscionera Hi everyone 🤗🤗🤗 Today I'm making spaghetti with artichokes, potatoes, and bottarga 🤤 Ingredients for 200g of thick spaghetti: 2 artichokes 1 medium potato 1 sprig of parsley 1 clove of garlic Extra virgin olive oil White wine Salt and pepper Bottarga to taste Preparation: Chop the parsley Peel the garlic Peel and dice the potato Clean the artichokes, cut them into slices, and place them in water to prevent oxidation. Method: 👨🏻‍🍳 In a large pan, I make a base of extra virgin olive oil, add the garlic clove, and as soon as it's hot, add the potatoes. Season with salt and pepper to taste with a pinch of chopped parsley. A splash of white wine and then half a glass of water to cook the diced potatoes. I add a few artichoke slices. Meanwhile, I bring salted water to a boil to fold the spaghetti. Once the potatoes are ready, the spaghetti will already be folded, so they need to be finished cooking in the pan. I use the pasta water to finish. Finally, add the extra virgin olive oil and the remaining artichokes. Give it a good stir, then turn off the heat. Add plenty of parsley and bottarga.
