Enjoy a spectacular dish following the recipe prepared by @nahuelpomponio on today's show! 👉 PICKLED VEGETABLE TONGUE VINAIGRETTE 🔥. . 🔥Ingredients: For the tongue: 4 pieces of pork tongue 3 L of water 150 g of salt 1 bay leaf Oregano Herbs Garlic For the vinaigrette: 200 ml of Cabernet Sauerkraut 20 g of brown sugar 100 ml of olive oil 2 tbsp of vinegar 1 tbsp of chopped herbs For the vegetables: 1/2 piece of red, green, and yellow bell pepper 1 piece of fennel 1 red onion 1/2 cucumbers 1L red wine vinegar Honey To finish: 2 tbsp capers 2 anchovies Salad: Candied mushrooms in jars: 3 oyster mushrooms 3 portobello mushrooms 1 clove garlic Olive oil (to taste) Thyme and rosemary 150g blanched potato halves 5 blanched asparagus halves Olive oil Salt and pepper . Process: 1. Prepare a brine with water, salt, bay leaves, garlic, and herbs. Boil the tongues and cook for 1 hour after they come to a boil. Let them cool in the liquid and then peel them. 2. Meanwhile, bring the vinegar and honey to a boil and submerge the vegetables in the hot liquid. Let it cool. 3. For the vinaigrette, reduce the wine with the brown sugar. Cool and emulsify with the olive oil and vinegar. Season with salt and pepper and herbs. 4. For the mushrooms: Place the chopped mushrooms in a sterilized jar, add 1 peeled garlic clove, rosemary, thyme, and peppercorns. Cover with olive oil and seal. Place in a saucepan with water and cook at 80°C for 1 1/4 hours. Cool and mix with the blanched baby potatoes and asparagus. 5.
