This time we visited the Cheese Fair in Ixcapuzalco, the municipal seat of Pedro Asensio Alquisiras, Guerrero; an event dedicated to celebrating the region's cheesemaking tradition. Here, the star is "queso de cincho," a handcrafted cheese made with techniques passed down through generations. During our visit, we sampled more than twenty cheeses, spoke with local producers, and discovered how milk is transformed into one of the state's most emblematic cheeses. In addition to cheese, we explored other aspects that bring the fair to life: from traditional breads and Ixcapuzalco souvenirs to leather goods created by local artisans. Everything revolves around the same goal: to promote and showcase the work of those who produce and sell these products.
