Across its vast cork oak forests, rolling farmland and traditional dehesas, the arrival of the wood pigeon each autumn marks the beginning of one of the region’s most deeply rooted hunting traditions. Known in Spain as *paloma torcaz*, the wood pigeon is admired for its intelligence, sharp eyesight and fast, unpredictable flight. Hunting these birds requires patience, precision and a deep understanding of the countryside. One of the most traditional methods in Andalusia is hunting with *cimbel*, a live decoy system used for generations in the oak-covered estates of southern Spain. This modality takes place mainly in the Andalusian dehesa, especially in provinces such as Cádiz, Córdoba, Jaén and Huelva. During autumn and winter, thousands of pigeons are attracted to these landscapes by the abundance of acorns scattered beneath cork oaks and holm oaks. Hunters prepare carefully concealed hides beneath the trees and position trained decoy pigeons on poles or pulley systems designed to imitate natural movement and attract passing flocks. Preparation is an essential part of the experience. Before dawn, hunters gather for breakfast in the countryside, sharing stories and anticipation before heading into the field. Once at the estate, every detail matters: the hide must blend perfectly into the landscape, the vehicle must remain hidden, and the decoy system must move naturally with the wind. Long periods of silence are often interrupted by the sudden appearance of wood pigeons crossing above the treetops at incredible speed. Some of the best wood pigeon hunting areas in Andalusia are found in the province of Cádiz, particularly within the cork oak forests of Los Alcornocales Natural Park. The combination of dense woodland, open feeding grounds and mild weather creates ideal conditions for this traditional style of hunting. Other renowned areas include the olive-growing regions of Córdoba and Jaén, where pigeons gather during migration and winter months. Wood pigeon hunting in Andalusia is closely connected to gastronomy and rural culture. Meals shared in the countryside are a fundamental part of the tradition. Hunters often enjoy grilled meats, local cheeses, Iberian ham and traditional stews prepared over open fires. Wood pigeon itself is highly appreciated in Andalusian cuisine and is commonly cooked with red wine, garlic and aromatic herbs. Hospitality also forms part of the experience. Throughout the hunting regions, visitors can stay in traditional cortijos, rustic lodges and rural hotels surrounded by oak forests and farmland.
