Whole Roasted Veal Sirloin — Medium Rare 🥩 A simple and elegant roasted veal sirloin with a juicy center and a rich butter finish. Ingredients 1.3 kg whole veal sirloin Salt Freshly ground black pepper 2 tbsp olive oil 30 g butter 2-3 cloves garlic Method 1. Remove the veal from the fridge 30–60 minutes before cooking. 2. Trim off any thick silver skin. 3. Season the veal generously with salt and black pepper. 4. Sear the veal in a hot pan with olive oil until golden brown on all sides. 5. Roast in a preheated oven at 180°C until the internal temperature reaches 55–58°C for medium-rare. 6. Remove the veal from the oven and rest for 15–20 minutes. 7. While resting, place butter and garlic on top of the hot veal and let it melt into the meat. 8. Slice and serve with your favorite vegetables.
