Here's the list of ingredients and quantities to make this delicious apple cake using an 18/20cm springform pan. 450g apples (350g weighed peeled and cored) 2 medium or 3 small apples 15g small knob of butter (or margarine or a tablespoon of water) 30g juice of half a lemon a generous pinch of white or brown sugar or a generous teaspoon of honey 150g warm organic milk, whole or skimmed (as preferred) 20g generous tablespoon of lemon juice 2 organic eggs, preferably at room temperature 150g white or brown sugar 30g tablespoon of apricot jam or 20g sugar 80g seed oil (for this recipe I use corn oil, which is sweet and delicate, but you can substitute it with your favorite seed oil; I personally avoid extra virgin olive oil because I find its flavor too strong for this cake) 5ml teaspoon of vanilla extract or half a sachet of vanilla 270g 00 flour 16g sachet of baking powder A pinch of cinnamon 180°C * 45/50 min. Always test with a toothpick before removing from the oven. The cake is ready when a toothpick inserted into the center of the cake comes out clean.
