Meanwhile, chop the cherry tomatoes and coarsely chop the almonds. 4. Fluff the couscous with a fork to separate the grains. 5. Add the cherry tomatoes, almonds, crumbled feta, and torn basil. 6. Finish with a drizzle of extra virgin olive oil and mix well. 🍜 RECIPE 3 - RICE VERMICELLI WITH SHRIMP AND VEGETABLES Ingredients (serves 2): 125g rice vermicelli 200g precooked shrimp 6 asparagus spears 1 carrot 1/2 yellow bell pepper 1/2 red bell pepper 2 spring onions Ginger powder to taste EVO oil to taste For the sauce: 3 tablespoons soy sauce 1 tablespoon teriyaki sauce 1 tablespoon sriracha sauce Juice of 1/2 lemon Method: 1. Slice the spring onions. 2. Heat a drizzle of extra virgin olive oil in a pan, add the ground ginger and spring onions. Sauté for a few minutes. 3. Chop the asparagus, peppers, and carrots. 4. Add the vegetables to the pan and cook for a few minutes, until they begin to soften. 5. Meanwhile, bring a pot of water to a boil. 6. Prepare the sauce by combining the soy sauce, teriyaki sauce, lemon juice, and Sriracha sauce. 7. Chop the pre-cooked shrimp and add them to the vegetables in the pan. 8.
