Watermelon Rind Preserves

Ingredients for Watermelon Rind Preserves watermelon rind peeled, red flesh removed, and cut into very thin pieces. 1 Tblsp Cinnamon 1 tsp ground Ginger Sugar or substitute Lemon juice salt water Cover pieces with enough water to barely cover them. Add 1/2 cup salt and soak overnight. Next morning drain the salt water and place pieces in pot. Cover with water and boil until almost totally clear. Drain and put back into pot. Add cinnamon, ginger, lemon juice and sugar. Cook until juice is thick enough for your taste and watermelon rind is clear. Pack into sterilized jars, place lids and rings them put into a boiling water bath for 10 minutes. If I have left anything out please forgive me and contact me for any questions.
