#bootsandbountyhomestead This Recipe Makes about 2 pints or 4 half pints Ingredients: 7-8 cups cut up rind 3 to 4 1/2 cups sugar 1 lemon deseeded, peeled, chopped Or 2 t. Lemon juice 1 t. Cinnamon Remove Green rind, cut up watermelon into 1/2" pieces Cover and coat with sugar, let sit for 20-30 mins Stir and let boil for 2 hours on low to Med-low until reduced down (see video) Mix in the lemon juice and cinnamon, stir and cook for 10-15 mins Ladle into jars, wipe rims, lids and rings to finger tip tight Hot water bath, covering with 1-2" of water above jars, for 15 minutes Remove from water bath, cover with towel, let sit over night or about 12 hours to cool completely and seal.
