Do you prefer your Breton far plain or with prunes? Chef Damien says prunes it is! 😀 The recipe 👇 Ingredients: 400g pitted Agen prunes 200g flour 50g light brown cane sugar 4 eggs 600ml whole milk 1 vanilla bean 25g salted butter 20ml rum 15g softened butter for the pan Preparation: In a saucepan, combine the milk and salted butter. Split the vanilla bean lengthwise and scrape out the seeds with the tip of a knife. Add them to the saucepan, along with the vanilla bean. Bring the milk to a boil, then remove from the heat and let it cool slightly to infuse the vanilla. Preheat the oven to 200°C (390°F). In a bowl, whisk the eggs with the sugar until the mixture is frothy. Add the rum and whisk again. Add the flour and whisk from the center outwards to obtain a smooth batter. Gradually add the warm, vanilla-infused milk, whisking continuously. Butter and flour a baking dish, preferably metal. Add the prunes and pour in the batter. Bake for 20 minutes. After 20 minutes, reduce the oven temperature to 170°C (325°F) and bake for another 20 minutes, or until the clafoutis is set and golden brown. Once baked, let it cool completely outside the oven.
