We all have dying cherry tomatoes in the fridge, and this is the ultimate recipe for turning them into a fabulous sauce for chic spaghetti that will delight your guests. Our beautiful stainless steel kitchen is by LGTEK: https://www.lgtek.it/ Ingredients: spaghetti (the good kind, right?) red datterini tomatoes (if they're about to go bad, even better) salt pepper extra virgin olive oil dried oregano brown sugar garlic clove Preparation: Cut your cherry tomatoes in half and place them face-up on a baking sheet. Season each tomato with salt, pepper, oregano, sugar, and oil. Bake for about 45-50 minutes at 180-200°C (the tomatoes should wilt). In a pan, sauté a clove of garlic in a little oil to flavor the oil. Remove the cherry tomatoes from the oven and remove them from the baking sheet (don't wash the dirty baking sheet!). Toss in the pasta and drain it 3-4 minutes early, so it can finish cooking in the pan. Reignite the heat under the pan and drain the spaghetti ahead of time, gradually adding the cooking water as needed. Pour a little of the cooking water into the dirty baking sheet and deglaze the pan to recover the cooking juices. Drop the cooking juices from the baking sheet into the pan with the spaghetti; they will brown and take on a delicious flavor.
