Place the flour and eggs in a stand mixer and knead until a homogeneous dough is obtained. 2. Wrap the dough in plastic wrap and let it rest in the refrigerator at +4°C. 3. Trim the edges of the dough with a knife. 7. Fold the dough from both ends and cut into strips about 2 cm wide to prepare the pappardelles. Ragu Sauce Preparation 1. Start by sautéing the chopped onion in olive oil in a pan. 2. Add the finely chopped carrots and celery stalks. 3. Season with salt and pepper. 4. Add the crushed garlic cloves whole and cook until the vegetables soften. 5. Add the ground beef and sauté until it changes color. 6. Add the tomato puree and bay leaves and cook over low heat with the lid closed for about 1 hour. 7. At the end of cooking, remove the bay leaves from the sauce. Cooking and Assembly 1. Boil the prepared pappardelles in boiling salted water until they float to the surface. 2. Transfer the boiled pasta to the ragu sauce and mix well. 3.
