Arroz de Coliflor - Cómo me Sano
INGREDIENTS: Olive oil 3 scallions 1 red bell pepper 1 cup grated zucchini 1 carrot 1 cup mushrooms 2 cups raw cauliflower 1/2 cup unsalted peanuts 1/4 cup soy sauce Lemon zest to taste Chopped cilantro to taste PREPARATION: Sauté 3 scallions, 1 red bell pepper, 1 cup grated zucchini, 1 carrot, and 1 cup mushrooms in a little olive oil. Grate 2 cups of raw cauliflower and add it to the mixture. Add 1/2 cup unsalted peanuts, 1/4 cup soy sauce, lemon zest, and chopped cilantro. Serve warm and enjoy!
