Here's a recipe for Zarda, also known as Sweet Rice or Mutanjan Rice, a traditional Pakistani and Indian dessert: Ingredients: • 1 cup basmati rice • 2 tablespoons ghee (clarified butter) • 1 cup sugar • 1/4 cup mixed dry fruits (such as almonds, cashews, and raisins) • 1/4 teaspoon saffron strands • 1/4 teaspoon cardamom powder • 1/4 teaspoon rose water • A pinch of yellow food color (optional) • 2 cups water Instructions: 1. Wash the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain. 2. In a large pot, bring 2 cups of water to a boil. Add the soaked and drained rice to the boiling water and cook until the rice is 70-80% cooked. It should still have a slight bite to it. Drain the rice and set aside. 3. In the same pot, melt the ghee over medium heat. Add the mixed dry fruits and sauté for a few minutes until they become slightly golden. 4. Add the partially cooked rice to the pot and mix well with the dry fruits and ghee. 5. In a separate small bowl, dissolve the saffron strands in a tablespoon of warm milk. Add this saffron milk, along with the sugar, cardamom powder, rose water, and yellow food color (if using), to the pot with the rice. Mix everything gently until well combined. 6. Reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice cook for about 15-20 minutes, or until the rice is fully cooked and the flavors have infused. Stir occasionally to prevent sticking. 7. Once the rice is cooked, remove the pot from the heat and let it sit, covered, for another 5 minutes. 8. Fluff the rice gently with a fork to separate the grains. Serve hot, garnished with additional dry fruits if desired. Zarda is often served as a dessert during special occasions and festivals.
