POV: Breakfast Rush to Gochujang Pork Belly Udon 👌😊👍

A busy morning in the canteen starts with the final 15 minutes of breakfast service before I move straight into lunch preparation. With breakfast service taking up most of the morning, there isn’t time for anything overly complicated. I keep the mise en place quick and simple, preparing udon noodles in a spicy gochujang sauce with bell peppers and mange tout, served with pork belly. Simple ingredients, limited preparation time and a delicious result—sometimes that is all you need during a busy kitchen service.
