Taiwanese Taro Ball Grass Jelly Dessert 1.Making Taro/Purple Sweet Potato/Sweet Yam Balls Sweet Yam Ball: Sweet Yam (200 g) + Tapioca (43 g) Tapioca (20 g) + Water (20 g) Purple Sweet Potato Ball: Purple Sweet Potato (200 g) + Tapioca (43 g) Tapioca (58 g) + Water (58 g) Taro Ball: Taro (200 g) + Tapioca (55 g) Tapioca (30 g) + Water (30 g) Matcha Taro Ball: Taro (200 g) + Tapioca (55 g) + Matcha (5 g) Tapioca (34 g) + Water (34 g) Steps: Cube and boil purple sweet potato, taro and sweet yam Crush and mix cooked taro with tapioca (68 g) Mix tapioca (20 g) with water (20 g); place contained inside pot of boiling water, stirring constantly, until mixture becomes sticky Mix in taro tapioca dough balls Repeat steps 1-4 to form purple sweet potato dough balls, sweet yam dough balls (add water and tapioca powder proportionately if taro/purple sweet potato/sweet yam are too starchy) Stretch and shape dough balls, dice into desired shape Boil until risen 1.芋圆制作 红薯芋圆:红薯200克 + 木薯淀粉A 68克 木薯淀粉B 20克 + 水20克 紫薯芋圆:紫薯200克 + 木薯淀粉A 43克 木薯淀粉B 58克 + 水58克 香芋芋圆:香芋200克 + 木薯淀粉A 55克 木薯淀粉B 30克 + 水30克 抹茶芋圆:香芋200克 + 木薯淀粉A 55克 + 抹茶粉5克 木薯淀粉B 34克 + 水34克 步骤:1. 紫薯,香芋,红薯切小块,上锅蒸熟 2. 煮好的香芋混合木薯淀粉A, 抓匀 3. 木薯淀粉B和水在料理盆混合均匀, 烧开一锅水,将料理盆隔热水加热, 加热期间需不断搅拌水淀粉,直至粘 稠状 4.拌入香芋粉团 (紫薯芋圆,红薯芋圆一样的操作步骤) (每个红薯,紫薯,香芋含水量都不一样, 如果做出来粉团太干,加少许水,粉团湿, 加少许木薯淀粉。) 5.粉团全部搓成长条,切小块 6.锅中水烧开,煮至芋圆浮起捞出 2. Making Grass Tea Jelly Ingredients: Grass Jelly Powder (200 g) + Warm Water (1200 g) Steps: Pour warm water into grass jelly powder, mix well Bring to a boil and cook on low for 4 minutes Pour into mold and place in fridge for 1 hour Cube the jelly once it sets 2.烧仙草制作: 材料:仙草粉200克 + 1200克温水 步骤:1.温水倒入仙草粉中,搅拌均匀 2.倒入锅中,中火烧开后改小火煮4分钟 3.倒入模具放凉冷藏 4.切块 3. Making Milk Tea Soup Base Ingredients: Water (400 g) + Earl Grey Black Tea (2-6 tea bags) Milk (300 g) + Evaporated Milk (80 g) + Cream (40 g) + Condensed Milk (45 g) Steps: Bring water to boil with tea bags (soak for 5 minutes) Add milk, evaporated Milk, cream and condensed milk, in that order 3. 奶茶汤底制作: 材料:水400克+伯爵红茶包 2-6个 牛奶300克 + 黑白淡奶80克 + 奶油40克 + 炼乳45克 步骤:1.水加茶包煮开,焖5分钟 2. 依次加入牛奶,黑白淡奶,奶油,炼乳 4.
