DUBLIN GUR CAKE

Gur Cake This cake was eaten by the poor of Dublin in the nineteenth and early twentieth centuries, for it was very cheap because it was made by bakers from their stale cake or bread stocks. Ingredients Shortbread Pastry 2 cups flour (240 grams) 3/4 cup icing sugar (150 grams) 1 cup butter (1/2 pound) 1 egg Beat butter and egg, add sugar blend then add flour. Refrigerate before use. Gur 9 slices of bread (I used 3 each of white bread, brioche and cinnamon raisin bread) Cake or muffin of your choice (no specific weight required) 1 1/2 cups raisins (240 grams) 2 teasp of all spice/mixed spice Pinch of nutmeg/ginger/cinnamon (optional) Juice of 1 orange Juice of 1/2 lemon Splash of Captain Morgan;s Spiced Rum (optional) Strong steeped tea, I used Earl Grey, enough to soak the bread. 2 1/2 tablesp of flour 1/2 teasp of baking powder 3/4 cup of brown sugar (150g) 1 egg 1/2 cup (1/4 lb of butter) 3 tablesp milk or cream (I used whipping cream) Blend well Bake @ 180 degrees for 15 mins, reduce to 170 Bake for 1 hour 15 mins. 2 1/2 tablesp of plain/all purpose flour 1/2 teasp
