Every morning starts at 3:00 AM. Glutinous rice is soaked, milled, steamed, and kneaded by hand. Red beans are slowly cooked into a smooth filling, while roasted peanut and black sesame remain faithful to the shop's original recipes. The most demanding moment comes when the freshly steamed mochi must be shaped and filled by hand while it is still too hot to touch, preserving the soft, chewy texture that generations of customers have come back for. With no flashy storefront and almost no advertising, the shop has grown through word of mouth for decades.
