Havaadhu lee bis / tuna filled dumplings / curried dumplings
Havaadhulee bis / tomato paste Lee bis/ tuna filled dumplings /curried dumplings .............................. We make the gravy/sauce/curry of the havaadhulee bis is different ways. I normally make it in 4 different ways. 1. Mainly with tomato paste, 2. With lonumirus havaadhu, 3. With store bought curry powder and lastly 4. With hanaakuri havaadhu. In this recipe, I mainly used tomato paste. Will try to post other variations some other day, In Sha Allah. .............................. Ingredients for: Filling: 1 nos. onion 1 nos. garlic 15 nos. curry leaves 1/3 scotch bonnet chilli 1/2 nos. lime juice (1 tbsp) Salt to taste (1/2 tsp) 1/2 cup smoked tuna 1/2 canned tuna 1/2 cup grated coconut 1/4 tsp tumeric powder 1/4 tsp black pepper powder Dough: 2 cup flour 2 tbsp cooking oil 1/2 tsp salt Water as needed (approx. 1 cup) For cooking dumplings: -Water For gravy/sauce/curry 3 tbsp cooking oil 1 nos. onion (medium) 3 garlic cloves 15 nos. Curry leaves 2 pandan leaf piece (4") 1/3 nos. scotch bonnet chilli (or to taste) 1 nos. ginger slice Salt to taste (3/4 tsp) 1/4 tsp black pepper powder 1/4 tsp cumin powder 1 tsp chilli powder / lonumirus havaadhu powder 1/4 tsp hanaakuri havaadhu powder (optional) 2 tbsp tomato paste 1 cup water 1/2 tbsp oyster sauce 1 tsp tomato sauce 1/2 cup coconut milk Directions: In a mixing bowl, add fine diced onion, chopped/chopped garlic, sliced curry leaves, fresh chilli, lime juice and salt to taste. Mix well. Add smoked tuna and canned tuna. Mix well. Add grated coconut, tumeric powder and black pepper powder and mix it will. Take small amount of the mixture and shape tiny round balls, to be used as the filling. In a kneading bowl, sieve flour. Add cooking oil, salt , and hot water as needed. Combine all with a spoon and then knead it to a soft dough. Once done divide it into small dough balls. Make small cup shape or flatten the dough balls, place the prepared filling and close it. Remove any excess dough from the sides and press to remove any excess air inside. You can also smooth the edges if you prefer. I like mine with finger marks on it. Repeat the process until no more filling. One done, set it aside. Bring water to boil. Once water is hot, add the dumplings/bis one by one. Give a quick gentle stir to avoid sticking at the bottom. On medium heat, cook till it floats. Once done, set it aside and now let's prepare the sauce. To a pot, add cooking oil, fine diced onion, finely chopped garlic, curry leaves, pandan leaf, fresh chilli according to your spice preference and ginger slice. Saute till onions are tender. Turn heat to low and add salt to taste, black pepper powder, cumin powder, chilli powder, curry powder and tomato paste. Mix 2-3 mins on low-medium heat. Add water and mix it. Add oyster sauce and tomato sauce. On low to medium heat cook 4-6 mins or till the sauce have reduced significantly. Add coconut milk and cook 2-3 mins on low to medium heat. Add cooked dumplings (bis) from earlier. Gently mix it well till all combined well and the sauce is thickened slightly. Once done, turn off the heat and continue to stir occasionally as it cools down. It is important to stir occasionally as it cools down to have creamy sauce. Otherwise it will be too dry. Enjoy.
