The Best Cabbage Roll Soup 1/2 of a large head of cabbage 1 pound of ground beef or bison 1 medium onion 2 carrots mostly in 1/4 chunks as shown 1 tablespoon of olive oil 4 cups of beef broth one 28 ounce can of chopped tomatoes 1/2 cup of brown rice 3 bay leaves salt to taste Fry the ground meat in 1 tablespoon of olive oil with the onion. Add the vegetables and sweat it down a bit and add bay leaves. Add the rice and cook another 5 minutes. Salt to taste. Add the broth and the chopped tomatoes. Cook until it is a rich looking color and everything is full tender. This is one of my favorite soups! I hope you enjoy this as much as we did! As usual, enjoy and have fun!
