Goan Shark Fish Ambotik Ingredients • 400 grams baby shark fish (Mori), cleaned and cut into pieces • Salt Ambotik masala • 7 Kashmiri red chilies • 1/2 inch cinnamon sticks • 3 cloves • 6 peppercorns • 1/2 tsp cumin • 1/2 inch ginger • 6 garlic cloves • 1 small lemon-sized ball of tamarind (deseeded) • 1/4 tsp turmeric For ambotik fish curry • 2-3 tsp of oil • 1 onion, chopped • Add salt to taste • 5 Kokum • 2 green chilies, slit from middle • ½ tsp sugar How to make Goan Ambot-Tik Curry • Season the fish with salt & keep it aside for 15 minutes. After 15 minutes, rinse the marinated fish pieces with water and keep them aside. • In a mixer jar, add all the ingredients listed under ambotik masala. Add 1/4 cup water or more as needed. Grind to a fine paste. Ambotik masala is ready. • Heat 2-3 tsp of oil in a pan over medium heat. • Add 1 onion, chopped. Saute until golden. • If you want to add a tomato, add 1 tomato and cook until it is soft. • Add ambotik masala. Cook it for a minute. Lower the heat if it burns, and add some water. Cook until the masala starts to leave oil. It will not stick to the pan once cooked. • I added water to the mixer jar, rinsed it out, and then added the water for the recipe. Adjust the consistency of the ambotik curry. • Add salt to taste, Kokum, and green chilies. Cook on medium heat until it comes to a boil. • Add fish. Gently stir it once. • Cover and cook until the fish is cooked. It cooks quickly, 2-3 minutes. • Once the fish is cooked, do not touch it with a ladle. • Add sugar. Fish ambotik is ready to serve.
