Brunost (brown cheese in Norwegian) or Mysost (whey cheese in several other Scandinavian languages) is a cheese made by reducing the whey from a previous cheese over a long period of time (F) to prevent it from burning. No whey is wasted! In this video, I show you how I made my own for the first time, perhaps reducing it a little too much, to achieve a wonderfully crisp and delicious texture on toast with jam.
