More than 400 kg of meat roasted for six hours in rotating spit cylinders. This is Menarosto, the most appreciated barbecue in the region where descendants of Italian immigrants predominate, in the state of Rio Grande do Sul, southern Brazil. Menarosto would mean "to rotate the roast," from the Veneto region dialect: mena + rosto. Therefore, originally created in Italy, the technique was adapted by immigrants in Brazil, who used game meat and, later, domestic birds and pigs to ensure survival and maintain their roots. The original mechanism was made of wood. Legend has it that this way of preparing meat was invented by Leonardo da Vinci. In this Menarosto shown in the video, quail, chicken, and pork marinated for two days in salt, spices, and white wine. Then, they were skewered and roasted for six hours. In fact, today Menarosto is a delicacy found mainly at community festivals and in some restaurants. Quail, chicken, pork, and even rabbit have replaced game meat. And the equipment has evolved; it's powered by an electric motor, and the skewers are special, measuring 1.5 meters. Besides the skill of the grillers, the biggest secret lies in the seasoning and the slow cooking method.
