The history of kharcho originated in picturesque Samegrelo, a mountainous region of Georgia. Megrelian cuisine is renowned for its generous use of walnuts, which play a key role in the preparation of authentic kharcho. Ground walnuts, mixed with water, give the dish such a thick consistency that it can hardly be called a simple soup. Rice is sometimes added for additional thickness, but this is not always necessary. The base of traditional kharcho always includes: Beef Fresh cherry plum (tkemali) or its paste (tklapi) Onion Garlic Aromatic spices such as khmeli-suneli, coriander, and pepper. Kharcho is believed to be one of the oldest Georgian dishes.
