Tasty Kerala Style Raw Manga Curry - Pacha Manga Curry

Ingredients : Mangoes- 4 nos Shallots- 250g Onion - 4 nos Ginger - 2 nos Green chilies- 8 nos Curry leaves Salt - 1 tsp Turmeric powder- 1 tsp Red chilli powder - 1 tbsp Coriander powder- 1 tbsp Coconut milk- 1 bowl Vinegar- 1/4 cup Dried red chilies - 6 nos To prepare Ankamali Mango Curry, begin by peeling and slicing the mangoes into small pieces and setting them aside. Next, peel and wash the shallots, ginger, onion, and green chilies. Slice the shallots, onion, ginger, and green chilies, and set them aside as well. Place the sliced mangoes in a large bowl, sprinkle with salt and turmeric powder, mix well, and set aside. In a separate bowl, combine chili powder and coriander powder with water to form a paste and set it aside. Grate the coconut, extract the coconut milk, and set it aside. In a large vessel, combine the sliced shallots, onion, ginger, green chilies, and curry leaves. Add salt and vinegar, then mash the mixture thoroughly with your hands. Mix in the prepared chili and coriander powder paste, followed by the mango pieces, ensuring everything is well combined. Add a small portion of the coconut milk and mix again. Place the vessel on the stove and bring the mixture to a boil. Once it boils, pour in the remaining coconut milk, stir well, and adjust the salt if needed. Let it cook for a few minutes, stirring occasionally, until the curry is done. In a separate pan, heat oil and fry dried red chilies, shallots, and curry leaves. Finally, pour this tempering over the curry, and your Ankamali Mango Curry is ready to serve.
