INGREDIENTS Rosé sauce 1 cup of mayonnaise 3 tablespoons of ketchup 1 teaspoon of Sicilian lemon juice 1 teaspoon of cayenne pepper 1 teaspoon of brandy Salty pionono dough 150 grams of wheat flour 150 grams of refined sugar 5 eggs 1 teaspoon of salt Butter, enough to grease Wheat flour, enough to grease Assembling the salty pionono 500 grams of sliced royale ham 500 grams of mozzarella cheese 1 jar of preserved hearts of palm Half a cup of chopped green olives 1 cup of sliced cherry tomatoes 1 handful of parsley, chives or dill Olive oil to taste Black pepper to taste PREPARATION METHOD Rosé sauce In a bowl, mix 3 tablespoons of ketchup and 1 cup of mayonnaise. Add 1 teaspoon of the juice of 1 Sicilian lemon, 1 teaspoon of cayenne pepper and 1 teaspoon of brandy. Set aside. Savory pionono dough Place a sheet of parchment paper on a baking sheet with low edges and grease with butter and flour over the parchment paper. Preheat the oven to 160 degrees Celsius. In a mixer, beat 5 eggs with 150 grams of sugar until creamy and aerated. Sift 150 grams of flour twice and add 1 teaspoon of salt. Reduce the mixer speed and gradually add the flour and salt. Spread the dough over the baking sheet, smoothing it with a spatula. Bake for 9 to 12 minutes or until lightly golden on top. Remove the dough from the oven and, while it is still warm, place it on a clean cloth. Carefully peel off the parchment paper and leave it loosely on top of the dough. Roll the dough into a Swiss roll shape with the cloth and parchment paper. Wait for it to cool. Assembling the savory pionono Unroll the Swiss roll, remove the parchment paper, but do not remove the cloth. Fill the surface of the unrolled dough with a generous layer of sauce, the slices of cheese and ham, the hearts of palm cut into sticks, the chopped olives, the cherry tomatoes seasoned with salt, a dash of olive oil and black pepper. Roll it up again into a Swiss roll shape, lifting the cloth and rolling up the cake. Press the Swiss roll tightly and, without removing the cloth, store it in the refrigerator for 2 hours, ideally overnight. Remove from the refrigerator, remove the cloth and cut into wide slices. Serve on the plate of your choice with the slices facing up.
