So join us as we cook a scrumptious Durban Style Chicken Curry just like my mum used to make; just a bit tweaked for a healthy balanced lifestyle. Enjoy! 🇿🇦 https://www.buymeacoffee.com/SihinandSon Here's the recipe: Fragrant Chicken and Potato Curry Prep time: 15 minutes Cook time: 35-40 minutes Servings: 4 Ingredients For the Base & Spices 1 tbsp coconut oil 1 large onion, finely chopped 1 tsp mustard seeds 1 tsp cumin seeds 1 tsp fennel seeds 1–2 tbsp breyani powder mix (adjust to taste) 3 tbsp Kashmiri curry powder (for that beautiful rich color and mild heat) The Main Event 800g- 1kg chicken, pre-marinated 4 large potatoes, peeled and cubed 1 tub tomato puree (240g) and 2 chopped tomatoes ½ cup water A handful of fresh coriander To Serve Warm roti or fluffy boiled rice Method Step 1: Sauté the Aromatics Heat the coconut oil in a large, heavy-based pot over medium heat. Add the chopped onion and sauté for 5 to 7 minutes until soft and translucent. Step 2: Toast the Spices Add the mustard seeds, cumin seeds, and fennel seeds to the pot. Stir for about 1 minute until they become fragrant and the mustard seeds begin to pop. Reduce the heat slightly and stir in the breyani powder mix and Kashmiri curry powder, allowing them to fry in the oil for about 1-2 minutes to release their essential oils. Be careful not to burn them! Step 3: Sear the Chicken Add your marinated chicken to the pot. Stir well to ensure the chicken is completely coated in the aromatic spice mixture. Let it cook for a few minutes until the chicken starts to change color. Step 4: Add the Base & Simmer Stir in the chopped tomatoes, tomato puree, fresh coriander, and cubed potatoes. Mix thoroughly so everything is well combined. Pop the lid on the pot and let it cook over medium-low heat for about 20 minutes, allowing the tomatoes to break down and the flavors to mix. Step 5: Cook Until Tender Pour in the ½ cup of water and give it one final mix.
