Ingredients: 370 g bread flour (Caputo Pizzeria) 320 g water 2 g Instant yeast 100 g sourdough starter 8 g salt 14 g olive oil Instructions: Mix all the ingredients except the olive oil until well combined. Let the dough rest at room temperature (24–26°C) for 30 minutes. Add the olive oil and mix until fully absorbed. Let the dough rest again at room temperature for 30 minutes. Perform a coil fold. Let the dough rest for 30 minutes. Perform a second coil fold. Let the dough rest for another 30 minutes. Perform a final coil fold, then immediately transfer the dough to a lightly oiled container. Refrigerate at 4°C for about 14 hours for cold bulk fermentation. Remove the dough from the refrigerator and transfer it to a lightly oiled baking pan. Fold the dough into thirds and place it seam-side down. Gently stretch and shape it to fit the pan. Proof at 25°C for 2 hours. Drizzle olive oil over the dough and dimple it with your fingertips. Bake in a preheated oven at 230°C for 15 minutes. Turn off the oven, leave the door slightly ajar, and let the bread sit inside for 2 minutes before removing it. Enjoy! Ingrédients 370 g de farine à pain (Caputo Pizzeria) 320 g d’eau 2 g de levure Instant 100 g de levain 8 g de sel 14 g d’huile d’olive Instructions: Mélangez tous les ingrédients, sauf l’huile d’olive, jusqu’à obtenir une pâte homogène. Laissez reposer la pâte à température ambiante (24 à 26 °C) pendant 30 minutes. Ajoutez l’huile d’olive et pétrissez jusqu’à ce qu’elle soit complètement absorbée. Laissez à nouveau reposer la pâte à température ambiante pendant 30 minutes. Effectuez un rabat en coil fold (rabat en spirale). Laissez reposer pendant 30 minutes. Effectuez un deuxième coil fold. Laissez reposer encore 30 minutes. Effectuez un dernier coil fold, puis transférez immédiatement la pâte dans un récipient légèrement huilé. Placez la pâte au réfrigérateur à 4 °C pendant environ 14 heures pour la fermentation en masse à froid. Sortez la pâte du réfrigérateur et transférez-la dans un moule de cuisson légèrement huilé. Repliez la pâte en trois, puis déposez-la soudure vers le bas. Étirez-la délicatement pour l’adapter à la taille du moule. Laissez pousser à 25 °C pendant 2 heures. Arrosez la pâte d’un filet d’huile d’olive, puis réalisez des empreintes avec le bout des doigts. Faites cuire dans un four préchauffé à 230 °C pendant 15 minutes. Éteignez le four, entrouvrez légèrement la porte et laissez le pain reposer à l’intérieur pendant 2 minutes avant de le sortir.
