Murtani (Upar Gaar/Pepper Choka) | Taste of Trini

Upar Gaar is most commonly referred to as Murtani or Pepper Choka. It is a blend of fire-roasted vegetables This can be eaten as a dish or a condiment. As a child growing up, my grandfather made this regularly. Murtani is meant to be extremely FIERY, but you can adjust the pepper to your preference. I usually buy this in Debe at the food sheds, but it's always better to make it at home. No river lime is complete without making murtani on a fireside or chulha. Recipe starts at 2:00 INGREDIENTS: 2 Tomatoes 2 small Baigan/Eggplant/Melongene/Aubergines 6-8 small Ochroes/Okra 5 Shadon Beni/Bandhania/Recao/Culantro leaves Scotch Bonnet Peppers (your preference) 2 heads of Garlic (20 cloves) 1 teaspoon of Lemon Juice 2 teaspoons of cooking Oil. Salt (your preference) Remember you can do this in the oven (broiler setting) or outside on the grill!
