Loaded Fries & Smoked Shawarma | Masala Mornings | Chef Shireen Anwar | 15 Feb 24 | MasalaTV LOADED FRIES RECIPE INGREDIENTS : Readymade potato fries ½ kg Boneless chicken cut into small cubes½ kg Marinate with; Hung curd 4 tbsp Lemon juice 2 tbsp Oil ¼ cup Garlic pastes 2 tbsp Tomato pastes 2 tbsp Paprika 1 tsp Cinnamon ¼ tsp Oregano ½ tsp Ginger powder ½ tsp Salt n black pepper ½ tsp each METHOD : Marinate chicken in all the given ingredients, grill in fry pan in 2 tbsp oil, remove and keep aside. Ingredients for Hot Sauce : Red capsicum 1 Crushed red pepper 1 tbsp Garlic 4 cloves Parsley 2 tbsp Vinegar ½ tbsp Tomato pastes 1 tbsp Crushed cumin ½ tsp Lemon juice 2 tbsp Water ½ cup METHOD : Blend all the ingredients into a smooth paste. Ingredients for Garlic Sauce : Mayonnaise ½ cup Yogurt 4 tbsp Garlic pastes 1 tsp Lemon juice 1 tbsp Parsley 1 tsp Olive oil 2 tbsp METHOD FOR GARLIC SAUCE : Mix all together, if thick, add some milk. Ingredients for Cheese Sauce : Butter 2 tbsp Cheddar cheese ¼ cup Mozzarella cheese ½ cup METHOD FOR CHEESE SAUCE : Melt these three on a double boiler, keep aside. Other Ingredients : Shredded carrot ½ Shredded cabbage ½ cup Chopped jalapenos ½ cup Chopped tomato seeds removed 1 Chopped coriander 2 tbsp Sar cream as required Fried samosa strips for serving TO ASSEMBLE : Spread fries on platter, top with grilled chicken, sliced cabbage, jalapenos chopped, carrot julienne, olives, top with red sauce, garlic sauce then cheese sauce, top with fried samosa patti and finely chopped parsley, sprinkle with coriander leave sand serve. SMOKED SHAWARMA RECIPE INGREDIENTS : Chicken julienne cut in strips 500 gm Marinate with; Tomato pastes 1 tbsp Yogurt 4 tbsp Lemon juice 2 tbsp Vinegar 1 tbsp Cardamom ½ tsp Tahini pastes 1 tbsp Cinnamon ¼ tsp Crushed red pepper 1 tsp Cumin crushed ½ tsp Chili powder 1 tsp Ginger garlic paste 1 tbsp Turmeric ½ tsp Coriander 1 tbsp METHOD : Marinate chicken with all the given ingredients, grill in fry pan till chicken tender. Other Ingredients : Butter 4 tbsp Tomato pastes 2 tbsp Salt n pepper ¼ tsp each Crushed red pepper ½ tsp Parsley 1 tbsp Cream ½ cup Readymade tortillas medium size as required METHOD : Heat 1 ounce butter, add grilled chicken, crushed red pepper, salt, black pepper, lastly add cream, give dum of coal, and keep aside. Ingredients for Habanero Sauce : Sour cream ½ cup Mayonnaise 4 tbsp Habanero Sauce hot 3 tbsp Salt n pepper ¼ tsp each Lemon juice 2 tbsp Chopped parsley 2 tbsp Chopped coriander leaves 2 tbsp METHOD FOR SAUCE : Mix all the ingredients together for Habanero Sauce TO ASSEMBLE SHAWARMA : Spread some garlic sauce on tortillas, then add smock onions, tomatoes, pickled cucumbers, chopped parsley, smoked chicken, Habanero Sauce, roll the tortillas tightly and grill in a grill pan, cut into 2-3 pcs, put in a small platter in a standing position, serve with fries.
