Beans and Chorizo is a Spanish inspired bean dish can be "at the ready" with it's short list of pantry items. Spanish Chorizo: https://amzn.to/32UGFuA Roasted Red Peppers: https://amzn.to/32YNr2C Butter Beans: https://amzn.to/32YNueO Recipe recap: 8 ounces Chorizo 1-2 tablespoons Olive oil 2-3 tablespoons Shallot, minced 2 Garlic Cloves, smashed but left whole 15 ounces Cannellini Beans, canned 15 ounces White Butter Beans, canned 12 ounces Roasted Red Peppers, canned 1-2 teaspoons Fresh Lemon Juice or Red Wine Vinegar Add the olive oil and shallot to a large skillet and place over medium heat. In the meantime, remove the casing from the chorizo, then dice into 1/4 or 1/2 inch cubes. Add the chorizo and smashed garlic cloves the pan. Stirring occasionally, cook until shallots are soften and chorizo begins to brown and render its fat. Drain both of the white beans, reserving some of the canning liquid. Add the beans to the skillet. Drain the red peppers, then chop into a rough dice. Add the peppers to the pan, and scrape the bottom of the pan with a wooden spoon to begin releasing any brown bits. Turn off the heat, and removed the garlic cloves and discard. Add 1-2 tablespoons of the reserved bean liquid to the pan for a final deglazing of any brown bits. Finish with a squeeze of lemon or splash of red wine vinegar. Optionally, grate over some Manchego cheese just before serving.
