This demonstrates the importance of this traditional recipe, which requires a few simple ingredients and gentle cooking, for a juicy, sensational result, worthy of mopping up the sauce. Cooking time: 50 min, difficulty: 3/5, gluten-free, lactose-free Ingredients for 3 people 1 chicken 3 peppers half an onion 3 cloves of garlic 300 g peeled tomatoes salt, pepper, chili pepper sage, and rosemary 1 glass of white wine Choose a large saucepan, approximately 28–30 cm in diameter. Clean the chicken, singe the hairs, remove any fatty parts, and cut it into 12 pieces: the thigh into 2 pieces, the breast into 3, and the wings. Place the chicken pieces in the pan, skin-side down. No oil is needed, and heat the chicken slowly with the lid on, so that it "sweats" and releases its fat. If you really want, you can add a drizzle of oil. As soon as it starts to brown, raise the heat slightly and let it roast for a few minutes. Then turn the pieces and brown the other side. Add the crushed garlic and sliced ​​onion and sauté with the chicken. Pour in the wine and, after a minute, add the deseeded and roughly chopped peppers. Cover and let the peppers soften for 5 minutes. Now add the salt, pepper, chili pepper (if desired), sage, rosemary, and tomato. Stir briefly, bring to a boil, and cover. Let simmer for 40 minutes. Stir a couple of times during cooking, but I recommend being gentle because this recipe makes the chicken incredibly tender. Optional additions include sliced ​​potatoes along with the peppers, or black olives toward the end of cooking.
