🟢食材: 雞翼 1公斤 (本菜使用 600克) 薑片、蔥段、蒜頭 適量 叉燒醬 1湯匙 麥芽糖 1湯匙 糖 ½茶匙 生抽 1湯匙 紹興酒 2湯匙 鹽 1茶匙 胡椒粉、油 適量 🟢做法: 1️⃣ 用淡鹽水浸泡雞翼10分鐘,洗淨吸乾水。 2️⃣ 醃一下雞翼 (1公斤) ,放入少許胡椒粉、1茶匙鹽、2湯匙紹興酒、1湯匙生抽、半茶匙糖、薑片、蔥段、蒜頭和少許油,醃4小時或過夜入味。 3️⃣ 熱鍋加油,下雞翼(不要放醃雞翼汁料)煎至金黃,翻面後加入醃雞翼的汁料,繼續煎至兩面金黃。 4️⃣加入1湯匙叉燒醬,轉小火蓋鍋煮5分鐘,加入1湯匙麥芽糖,待麥芽糖完全溶化後即可上碟。 🟢Ingredients: Chicken Wings - 1 kilogram (using 600 grams for this dish) Ginger Slices, Spring Onions, Garlic - as needed Char Siu Sauce - 1 tablespoon Maltose - 1 tablespoon Sugar - 1/2 teaspoon Light Soy Sauce - 1 tablespoon Shaoxing Wine - 2 tablespoons Salt - 1 teaspoon White Pepper Powder, Oil - as needed 🟢Cooking Directions: 1️⃣ Soak the chicken wings in lightly salted water for 10 minutes, wash and dry. 2️⃣ Marinate the chicken wings (1kg) with a little white pepper powder, 1 teaspoon salt, 2 tablespoons Shaoxing wine, 1 tablespoon soy sauce, ½ teaspoon sugar, ginger slices, spring onions, garlic, and a little oil. Marinate for 4 hours or overnight for better flavor. 3️⃣ Heat the pan with oil and fry the chicken wings until golden brown, do not add the marinade. Flip the wings and add the marinade to the pan. Continue frying until both sides are golden brown. 4️⃣ Add 1 tablespoon char siu sauce, reduce to low heat and cover the pan. Cook for 5 minutes. Add 1 tablespoon maltose and cook until fully melted.
