The dough is made with simple ingredients: bread flour, water, plain yogurt, instant dry yeast, and salt. The surprise ingredient in this recipe is yogurt. It helps make the inside of the bread softer, slightly tangy, moist, and more flavorful. This recipe is made for short fermentation, so there is no long overnight waiting. For a crispy and appetizing crust, bake the baguettes in a very hot oven with steam. I also cut the dough with scissors before baking to help create a beautiful crispy crust. This bread turns out crispy on the outside and soft and moist on the inside. You can enjoy it with breakfast, lunch, dinner, soups, cheese, butter, or your favorite meal. Important note: This recipe is designed for short fermentation. If you want to ferment the dough for 8–10 hours, reduce the yeast and be careful because yogurt can weaken the gluten structure during long fermentation. Ingredients: 285 ml / 9.6 fl oz / 1 + 1/5 US cups water 100 g / 3.53 oz / about 0.4 US cup plain yogurt 5 g / 1.5 tsp instant dry yeast 500 g / 17.6 oz / 4 US cups bread flour, 12% protein 6 g / 1 tsp salt Rest the dough on the counter: 45–60 minutes Final rest after shaping: 20 minutes Bake: 230°C / 446°F for 25 minutes Oven setting: top and bottom heat Steam: Place a bowl of boiling water on the oven floor I added 2 more baguette bread recipes below.
