Easy Gluten-Free Summer Dinner | BBQ Chicken, Greek Salad & Loaded Baked Potatoes (Recipes Below)

After my Costco haul, some of you asked to see the meals I was planning to make, so today I'm cooking with my hubbity bubbity, Darren! Everything in today's dinner is gluten-free (just be sure to double-check ingredient labels where you live if you're cooking for someone with celiac disease or a gluten sensitivity). 🍗 Darren's Delicious BBQ "Beer Can" Chicken (Without the Beer!) You'll need: 1 whole chicken Your favourite seasoning (we use Lawry's Seasoned Salt because it's gluten-free here in Canada—always check labels in your country!) A can that's only half full of your liquid of choice. We love: Apple juice Orange juice Bubly sparkling water with a splash of lemon juice Or traditional or gluten beer if you prefer Directions: -Prepare your support rack & can of liquid of choice and place it on a pie plate for easier cleanup and carrying. -Rinse the chicken (we don't pat it dry so that the seasoning sticks better). -Season the outside generously. -Carefully place the chicken over the half-full can and set it onto the rack. -Place the chicken in the centre of your BBQ. -Turn only the outer burners to High. Leave the centre burner off. -Close the lid and cook for 15 minutes. -Reduce the heat to Medium. -Continue cooking for approximately 1 hour, rotating the chicken a quarter turn every 15 minutes or so to help prevent the skin from burning. -Cook until the thickest part of the chicken reaches a safe internal temperature. If the skin gets a little too dark, don't worry! Simply remove it before serving and enjoy the juicy chicken underneath. Note: Cooking times will vary depending on the size of your chicken and how your BBQ cooks. Always use a meat thermometer and cook poultry to a safe internal temperature. 🥔 Oven-Baked Potatoes with Garlic Scapes Ingredients Baking potatoes Olive oil Salt Butter Sour cream Grated marble cheese Garlic scapes (or chives) Directions Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Wash potatoes and poke several holes with a fork. Rub each potato with olive oil. Sprinkle generously with salt. Bake at 425°F for 15 minutes. Reduce oven to 375°F (190°C) and continue baking for approximately 45 minutes, or until fork tender. Cooking time will vary depending on the size of your potatoes. Serve with butter, grated marble cheese, sour cream and sautéed garlic scapes (our favourite substitute for chives!). Dress them however your family likes best. 🥗 Greek Salad with Homemade Balsamic Vinaigrette Homemade Balsamic Vinaigrette Ingredients 8 tbsp olive oil 4 tbsp balsamic vinegar 4 tbsp water ½ tsp sugar ¼ tsp salt ¼ tsp pepper About 1 tbsp Dijon mustard (or a generous squeeze) Whisk together or shake everything in a mason jar until well combined. Taste and adjust the sweetness or seasoning to your liking. Greek Salad (Denise's version) Ingredients Cucumbers Tomatoes Red onion Kalamata olives (pitted and halved) Feta cheese Chop the cucumbers and tomatoes to your preferred size. Add sliced or diced red onion, Kalamata olives and crumbled feta cheese. Toss with the balsamic vinaigrette and let the salad sit for a little while before serving so the flavours have time to come together.
