The method is simpler than you think. Pat your mozzarella completely dry (this step matters more than you'd expect). Do a double coating: flour, egg, breadcrumbs for the first pass — then skip the flour and go egg and breadcrumbs again. Freeze for at least an hour. Preheat your air fryer to 400°F (200°C). Spray generously with oil. Then 7 minutes. That's the whole thing.What comes out is shockingly good. The outside shatters when you bite into it. The inside is pure, fully melted mozzarella.
