How to Make Smoor Djawa: Indonesian Beef Stew with Potatoes and Soy

Smoor Djawa is a Dutch-Indonesian beef stew — beef chuck braised slowly with onion, galangal, red chili, and a generous pour of ketjap manis until the sauce is rich, dark, and slightly sweet. What makes this recipe distinctive is the potato: it goes in as a large chunk that absorbs all the braising flavors. I was introduced to this dish by a friend in college, then had it again in the Navy. I now make it several times every winter. Serve it over white rice with the sauce spooned generously over the top.
