You can find her here: Youtube "The Plant Provision" / @theplantprovision Instagram: @plantprovision / plantprovision Email: [email protected] Spicy Fall Vegetable Chili Ingredients: 2 15 oz Cans Cannellini beans (or any kind of beans you prefer) 1 White Onion chopped 2 stalks of Celery chopped 1 cup Shredded or Chopped Carrots 1 Can Green Beans drained (or use fresh or frozen) 1 15 oz Can Diced or Crushed Tomatoes (or can substitute fresh) 1 TB Tomato Paste 1 Can Chopped Jalapenos (or omit if you don't like spicy) 4 Garlic Cloves chopped 2 small/medium Yukon Gold Potatoes grated (or finely chopped if you prefer) 2 cups Butternut Squash finely chopped 1- 32 oz Salt Free/ Low Sodium Vegetable Broth (or water- add more if you want more of a soup than a chili) 1 tsp cumin 1 tsp chili powder 1 tsp smoked paprika 2 TB Costco no salt seasoning (or any blend you prefer) 2 Bay Leaves 1 tsp pepper or to personal taste 8 oz fresh spinach Juice of 2 lemons (optional: finish with lemon zest and fresh parsley) Combine everything except the spinach and lemon juice in an instant pot, pressure cook on high for 5 min. You can also combine the ingredients and cook on the slow cooker or on the stove. Once done, stir in the fresh lemon juice and spinach. Serve alone or over starch of choice such as rice, pasta, or with a side of toast, whatever you prefer! I like to top mine with lemon zest and fresh parsley!
