It’s a fast-casual Hawaiian institution known for hearty lunch plates and island-style comfort-food classics. One dish completely caught me off guard, though, was the chili. There was something about it that felt different from any chili I had grown up eating. It was rich but not heavy, savory with just the right amount of spice, and just incredibly comforting. What really sealed it for me was eating it with rice. That combination was right up my alley and felt instantly familiar, almost like a bridge between Hawaiian plate lunch culture and the comforting meals I gravitate toward. Ever since that trip, I have found myself craving Zippy’s chili constantly. I set out to recreate it at home in a way that felt true to the original while remaining easy and approachable. So today, we’re making it in the Instant Pot to make it super easy. Zippy’s was founded in 1966 in Honolulu and has since become one of Hawaii’s most recognizable local restaurant chains. For generations of locals, Zippy’s is not just a restaurant. It is a part of everyday life. From late-night cravings to family meals to post-work comfort food, Zippy’s has been there through it all. Their chili is one of the most iconic items on the menu. It shows up everywhere. On its own. Over rice. On chili spaghetti. Paired with fried chicken or loco moco. It is a true staple.
