Hello. Today I will show you a delicious recipe for celery schnitzel. If you want to support my work, please leave me a like. First, the celeriac is cut in half. This way it cannot roll to the side and you can work more safely with the knife. Remove the roots and peel all around. If you want, you can also use a vegetable peeler for this. Cut off slightly larger pieces from the sides that you can use later, e.g. for raw vegetable salad. Covered with damp kitchen paper, the peeled celery keeps very well in the refrigerator. Cut the celery into slices about 1 cm thick. Put a pot with water on and salt. Cook the celery in it for about 8-10 minutes. Then rinse the celery slices in cold water (ice water is best). When they have cooled down enough, remove them from the water and dry them with kitchen paper. Mix 1 egg with salt, pepper, ½ tsp mustard and approx. 3 tbsp milk or cream and place in a flat dish. In two other bowls, put 3-4 tablespoons of wheat flour in one and 3-4 tablespoons of breadcrumbs in the other. First roll the celery shavings in the wheat flour, then add them to the egg mixture and finally roll them in the breadcrumbs. Fry in hot oil over medium heat for about 4-6 minutes on each side until golden brown. Place the celery slivers on paper towels to drain excess oil.
