An experience in a hotel restaurant during the Miami Food & Wine festival sparks a memory for Gabrielle and a reminder of an important lesson in hospitality she learned while opening a restaurant in Turkey almost 25 years ago. As much as the hospitality industry owes visionaries like Danny Meyer who famously said, “You can’t teach people to be nice,” in Gabrielle’s experience, sometimes you don’t have the luxury of employing individuals who are naturally hospitable. So what’s the solution? Gabrielle has a 62-page employee handbook that still says “Draft” at the top.
