Back home I’m making another batch of homemade sauerkraut (this time trying a much easier method!), batch cooking lasagne ready for the school holidays, and sharing how I’m trying to move our family away from ultra-processed foods through simple preparation rather than perfection. We also head to the gym together for a back workout, wander through the beautiful Forville Market in Cannes, and I have a big cosmetic clear out using the Yuka app to scan ingredients in everyday products. Finely chopped vegetables of your choice Extra virgin olive oil Salt Paprika Dried oregano Italian herbs Chopped tomatoes (I love Mutti Polpa) Tomato purée Cook the onion, garlic and vegetables gently in plenty of extra virgin olive oil until softened. Add the mince and cook until browned. Stir in the herbs, salt, paprika, chopped tomatoes and tomato purée, then leave to simmer until rich and thick. Béchamel Sauce Butter Plain flour Milk Salt & pepper A pinch of nutmeg Grated cheese of your choice Melt a generous amount of butter, stir in enough flour to make a smooth paste, then gradually whisk in the milk until silky. Season with salt, pepper and a pinch of nutmeg, then stir through the grated cheese. To Assemble Layer in this order: Bolognese Lasagne sheets Béchamel Repeat the layers until your dish is full. Finish with a generous layer of béchamel and a good handful of grated Parmesan. Bake until bubbling and golden on top. ✨ Perfect for batch cooking—enjoy some fresh and freeze the rest in portions for easy homemade meals. __________________ Easy Homemade Sauerkraut 🥬 You only need: 1 cabbage 2% salt (20g salt per 1kg cabbage) Method Finely slice the cabbage and weigh it. Add 2% salt and massage until it releases plenty of liquid (or use a stand mixer with a paddle attachment to do the hard work!). Pack the cabbage tightly into a clean glass jar, pressing it down so it’s completely covered by its own brine. Use a fermentation weight if you have one. Leave to ferment at room temperature for around 1–3 weeks, depending on how tangy you like it. Once it’s ready, transfer it to the fridge to slow the fermentation. ✨ Simple, delicious and packed with beneficial bacteria for your gut. Add 1–2 tablespoons of broccoli seeds to a sprouting jar. 2. Cover with water and soak overnight (8–12 hours). 3. Drain and rinse well. 4. Rinse and drain twice a day (morning and evening). 5. Keep the jar upside down or tilted to allow excess water to drain away. 6. After 4–6 days, your sprouts will be ready to eat. 7. Give them a final rinse and store in the fridge.
