ANGLO-INDIAN VEGETABLE STEW WITH BEANS, CARROTS AND POTATOES Ingredients 3 carrots 4 or 5 French beans 2 potatoes peeled and cut into quarters 2 green chilies slit lengthwise 1 medium size tomato chopped 1 big onion sliced 2 teaspoons ginger garlic paste 2 or 3 cloves, 2 small pieces of cinnamon, 6 or 7 pepper corns 1 teaspoon pepper powder A few mint leaves (optional) Salt to taste 2 tablespoons oil 3 tablespoons coconut milk Wash the vegetables and cut into medium size pieces. Heat oil in a suitable pan and add the cinnamon, cloves and pepper corns and fry for a few minutes. Add the onions and green chillies and fry till the onions turn light brown. Add the ginger garlic paste and fry for a few minutes. Add the pepper powder and the chopped tomato and fry for a few minutes. Add the cut vegetables, salt and sufficient water cook covered till the vegetables are cooked. Add the coconut milk and mix well. Simmer for 2 or 3 minutes, then switch off the heat.
