However, it is not the usual recipe because it is ravani from below with pastry cream on top, sprinkled with cinnamon and pistachio. You will also find it called Byzantine. The taste is excellent and I recommend you try it! 🥣 RECIPE Syrup 400 g sugar 600 ml of water 1 cinnamon stick A little lemon juice Base 7 eggs 150 g sugar 120 ml of milk 70 g strained yogurt 4-5 grains of mastic 200 g fine semolina 200 g flour 10 g of baking powder Cream 1 liter of milk 200 g sugar 100 g corn flour 2 yolks Two vanilla 200 ml sour cream METHOD Syrup We start our recipe by making the syrup. Boil the sugar together with the water and 1 cinnamon stick in a pan for 5 minutes. Then, remove from the heat and add a little lemon juice. Base Then we make the base of our cake. Mix the eggs with the sugar until fluffy. Then add the milk, yogurt and continue mixing. Then mix the mastic with a little sugar in a mortar, until they become powder. Put the semolina, the flour, the baking powder, the mastic and stir until they become porridge. Then, put it in a buttered pan 35x24 cm and bake at 170 degrees Celsius until golden brown. When it is cooked and our dessert is still hot, we pierce it and syrup it with cold syrup. Cream Finally, we make the cream. So put half the milk (500 ml) to heat together with the sugar. In the remaining cold milk (500 ml) add the corn flour and the egg yolks. Strain the milk with the corn flour in the pot and stir until it thickens. When the cream is ready, flavor it with the vanilla. Spread the hot cream over the cold dessert, cover with cling film and leave to cool. At the same time, whip the cold cream. After our cream has cooled from the previous step, spread the whipped cream on top of the cream.
