Pipi e Patati with Nonno Raffaele, traditional Calabrese dish he loves to cook for his grandchildren

Nonno Raffaele Martino 67 year old Raffaele was born in Piminoro, Province of Reggio Calabria, Calabria. He came to Australia when he was 23 years old with his brother to visit another brother and their sister who had migrated to Australia six months later he was married! He now lives with his wife and they cook together for their children and grandchildren who visit regularly and love all the traditional dishes from Calabria including what he is making today. Today he makes us one of the most traditional dishes of Calabria - "PIPI E PATATI" - fried capsicums/peppers and potatoes and he likes to add eggplants too. You can make it too, see recipe below. Place the lid on. Stir occasionally and when the capsicum and eggplants are half cooked add in the potatoes. 4.Add some more salt on top of the potatoes before gently mixing everything through. 5.Cook for a further 10-15 minutes or until all the vegetables have softened and cooked through. 6.Enjoy with lots of bread, salami, pancetta, olives and wine!
