This easy recipe uses simple ingredients yet delivers an outstanding taste. Serve this delicious Mutton Lajawab with naan, roti, tandoori roti, or jeera rice for a truly satisfying meal. Ingredients: For Boil: Mutton – 1 kg Ginger Garlic Paste – 1 tbsp Onion – 2 Medium Tomato – 1 Large Oil – 1 tbsp Water – ½ Cup Salt – To Taste Green Masala: Green Chillies – 4–5 Coriander Leaves – ½ Cup Curd – ½ Cup For Gravy: Oil – ½ Cup Whole Spices: Cumin Seeds – 1 tsp Black Cardamom – 1 Green Cardamom – 2 Cloves – 3–4 Cinnamon Stick – 1½ inch Star Anise – 1 Bay Leaves – 2 Onion – 2 Medium Ginger Garlic Paste – 1 tbsp Powder Spices: Kashmiri Red Chilli – 1 tsp Red Chilli Powder – ½ tsp Cumin Powder – 1 tsp Coriander Powder – 1 tsp Turmeric – ½ tsp Garam Masala – 1 tsp Salt – As Required For Garnish: Fresh Coriander Leaves Method Step 1: Boil the Mutton In a pressure cooker, add 1 kg mutton, 1 tbsp ginger-garlic paste, 2 medium onions, 1 large tomato, 1 tbsp oil, salt to taste, and ½ cup water. Pressure cook for 6–7 whistles or until the mutton becomes tender. Step 2: Prepare the Green Masala Blend the green chillies, fresh coriander leaves, and curd into a smooth paste. Step 3: Sauté the Whole Spices Heat oil in a pan. Add cumin seeds, black cardamom, green cardamom, cloves, cinnamon stick, star anise, and bay leaves. Sauté for a few seconds, then add the sliced onions and cook until golden brown. Add the ginger-garlic paste and cook until the raw smell disappears. Step 4: Add the Powder Spices Add Kashmiri red chilli powder, red chilli powder, cumin powder, coriander powder, turmeric powder, garam masala, and salt. Sauté for 1–2 minutes. Step 5: Add the Mutton and Green Masala Add the boiled mutton along with its stock (yakhni). Then add the prepared green masala paste and cook for 3–4 minutes, stirring well. Step 6: Simmer Cover the pan and let it simmer over medium heat for 8–10 minutes until the gravy becomes thick and the flavors are well combined. Step 7: Garnish and Serve Garnish with freshly chopped coriander leaves and serve hot with naan, roti, tandoori roti, or jeera rice.
