You open the freezer, take out a bag of hake fillets or some fish sticks for the kids, and throw them in the pan, convinced you're giving your family good old-fashioned, healthy fish. But turn the bag over: part of what you paid for isn't fish. It's ICE (the glaze, a layer of frozen water added to make it heavier). And in the fish sticks and the breading, another part is BATTER: bread, flour, and oil. You paid for fish and got, in part, water and bread. IMPORTANT and honest: freezing fish is NOT bad. On the contrary, it's an excellent technique, and often a well-frozen fish is fresher than the "fresh" fish on the counter. The problem isn't freezing. The problem is the ice they charge you for as fish, the batter they charge you for as fish, and the distant origin they hide from you. In this video, we explain 3 key words that almost no one notices: — GLAZING: the ice. Look for the "drained net weight" (the fish without ice). BATTER: Check the percentage of actual fish in fish sticks and breaded items. ORIGIN: A lot of "traditional" hake comes from the other side of the world, not the Cantabrian Sea. Let's count down from 8 to 1: cheap fish sticks, breaded items, store brands with lots of ice, surimi, pangasius, and tilapia… And number 1 is the most famous frozen fish brand in Spain. We'll show you two home tests: the glaze test (weigh the bag before and after defrosting and see how much was ice) and the breading test (open a fish stick and see how much fish is left).
