The Unofficial Sandwich of Harlem | Sandwich City | NYT Cooking

For over 50 years, Famous Fish Market in Harlem has endured, persevered and thrived without backers, social media or marketing. The family-owned business is known for its good service, clean oil (changed daily) and consistently delicious fried seafood. People line up every day for a simple sandwich that always hits: fried whiting on white bread. “Consistency — every day — that’s key,” said the owner, Sterling Eric Strickland, who taste-tests the batter daily. Even at 75, he can be found packaging to-go containers of the same brand of tartar sauce they’ve served since opening. Watch to see how the iconic New York sandwich is made, and to learn more about how it became a Harlem institution.
