I Made Bread From Just Buckwheat and Water. It Actually Works.
This recipe is really a 1-ingredient only gluten free bread recipe. All you need is buckwheat groats, water and salt. I didn't believe it would turn out nice, but I've tried it out three times, I can safely say that "I made bread from just buckwheat and water"... and it actually works! The only downside to this gluten free bread recipe is the soaking time. As you can see in the video, you first need to soak the buckwheat for 12 hours, and then, after draining it and blending it with water, you need to let it rest again for another 12 hours. But the result is a delicious loaf of completely gluten free bread, that's incredibly easy to make. It's also yeast free, gum free, baking powder free and baking soda free.
