Baked Beans - How to Make them, from Scratch, and Can to be Shelf Stable (Waterbath Canning)

In this video I show how to make baked beans and how to Waterbath can to make them shelf stable. I don’t use any specialist equipment and jars can be reused, to make them good value for money. We are a family of five, plus animals, living in the UK, trying to be as self-reliant as possible using the space we have (1/25th of an acre), after chronic illness leading to job loss halted our small holding dreams. Ingredients 1Kg/2.2lb dried haricot beans (soaked over night) /5-6 cans of tinned beans 25 tomatoes (my tomatoes reduced a lot so will use a few more next time) 4 leeks or red onions 8 tsp sugar/sweetener or 6 tsp honey 400ml Passata Salt and Pepper to taste Canning times from a rolling boil 90 Minutes / 1 1/2 hours (cooked beans) 150 Minutes / 2 1/2 hours (uncooked, pre soaked beans) REHEAT THOROUGHLY (85oC/185oF) FOR 10 MINUTES BEFORE CONSUMING (This ensures any bacteria is eliminated) Unsealed jars must be refrigerated and consumed within a few days and use any jars that have siphoned (leaked during processing) should be used quickly as it may have provided a false seal so it becomes unsafe.
